Fav Recipe - VEGANized!

November 16th 2008, I asked my wonderful friend - for some assistance in veganizing one of my favorite recipes - cheese & shrimp stuffed poblano peppers with red pepper sauce - he suggested the idea to substitute mushrooms for the shrimp to achieve the same mouth-feel & texture and that I could use a faux cheese sauce of my choice. At that time, I was so new to vegan cooking and was learning so much that I put this aside.
Until today.....
I had leftover cheese sauce from my last pizza. And I did use the mushrooms, along with some Gardein chick'n scallopini filets. 

An old favorite, back in action - absolutely wonderful!
