After a bout of avocado sandwich obsession that had to come to a sudden end, I am back on track. This is what I've been eating this week:
Curried lentils and rice (with raisins, sunflower seeds and diced apple - yum!) with homemade curry powder
Polenta lasagna with spinach and portabella mushrooms
Portabella mushroom burger (had leftover mushroom from the lasagna)
Spicy tofu with peppers & cashews (without the oil served over mashed potatoes)
