Polenta Fries


I went to google "polenta lasagna" to use up leftover cheese sauce & veggies and the auto-fill brought up a polenta fries search - certainly couldn't turn that down! Became inspired and used this recipe and used a marinara dipping sauce - easy! I didn't use the vegetable peeler as the recipe suggested, rather cut half moon shapes... Surprising texture - crisp, chewy on outside and creamy on the inside....

Instead of using a tablespoon of oil (if you did) one could use a little soy milk with lemon juice in it, then "bread."

The "water and corn starch Bryanna thing" would work, but probably more time than most would want to invest in.

Ingenious recipe, though.
