Polenta Lasagna

In a valiant effort to finish off the leftover "cheese sauce" from aforementioned pizza, I turned to a all-time favorite (also one of my sister's favorites) Recipe here - Substituted spinach for the kale, added some green pepper, jalapeno and tomatoes (using up leftovers) in with the onion & mushrooms - wonderful!

Polenta Fries

I went to google "polenta lasagna" to use up leftover cheese sauce & veggies and the auto-fill brought up a polenta fries search - certainly couldn't turn that down! Became inspired and used this recipe and used a marinara dipping sauce - easy! I didn't use the vegetable peeler as the recipe suggested, rather cut half moon shapes... Surprising texture - crisp, chewy on outside and creamy on the inside....

Friday Night Pizza

Tried out a new crust I picked up at the organic store in Grandy, NC (too chewy for my liking). Also tried a extremely top secret sauce topping that was very good - very creamy and rich and smooth, the ingredients for it were super healthy as well as the veggies on the pizza and the grains in the crust...

100% Homemade Pizza

Made the dough Thursday (got side-tracked by Earl, delayed the pie), used another "top secret" non-dairy cheese-like sauce, roma tomatoes, onions, shitake mushrooms sauteed in sherry, garlic, oregano, and then the following were from my container garden - basil, jalapeno and bell peppers, so cool!
The sauce was smooth and creamy - great texture - extremely healthy ingredients in it as well as the rest of the pizza.
