November 16th 2008, I asked my wonderful friend - www.soulveggie.com for some assistance in veganizing one of my favorite recipes - cheese & shrimp stuffed poblano peppers with red pepper sauce - he suggested the idea to substitute mushrooms for the shrimp to achieve the same mouth-feel & texture and that I could use a faux cheese sauce of my choice. At that time, I was so new to vegan cooking and was learning so much that I put this aside.
Until today.....
I had leftover cheese sauce from my last pizza. And I did use the mushrooms, along with some Gardein chick'n scallopini filets.
An old favorite, back in action - absolutely wonderful!

Thanksgiving 2010
Garlic mashed potatos, green bean casserole, corn pudding & seitan holiday roast, (used leftover broth for gravy base) pecan pie and pumpkin nut pie.... wonderful Thanksgiving, wonderful family - truly blessed.

Quick Pizza
Had leftover sauce from making quesadillas the other night (from this recipe) grabbed a convenient, pre-made crust, sliced some tomatoes, onion, pepper, jalapeno and tossed in the oven.... easy, fast, tasty...

Buddha's Happy Belly of Curried Lentils, Cauliflower & Tomatoes
From this recipe with the oil omitted, used sherry to saute garlic, green onions & spices. Wonderful! And easy.
