Pumpkin & Black Bean Casserole

Yeah, it might not sound appealing, but it's somehow genius. I subbed 2 small butternut squashes for the pumpkin. Recipe here.

Nice photo... are there any others?

I've found that, in general, any of the "yellow or orange" winter squashes can be interchanged in recipes.

Not sure about the Hubbards.
