"Beef" and Broccoli with "Flavor Bombs"
Gardein beef tips with steamed broccoli over rice with some melted pepperjack "cheese".
Paul made a side dish creation which I nicknamed "Flavor Bombs", which they were. Braised mushroom caps stuffed with a mixture of garlic, mustard, siracha, curry hummus with melted pepperjack "cheese" topped with "Bacn" bits.

"Tuna" Mushroom Casserole

First, this had no resemblance to tuna or tuna casserole. None. With that out of the way, it was really tasty. Made the usual no oil adjustments, used mushroom broth instead of vegetable broth, used chickpea flour for the flour. Best of all - plenty of leftovers!

Tofu, Black Bean, Cauliflower Stir Fry
This turned out particularly good - conception was the need to clean out fridge (as all great meals have their beginnings). Stir fry consisted of tofu, diced onion, mushrooms, cauliflower, black beans, fire roasted diced tomatoes (with their juice) and spices (chili powder, rosemary, salt, garlic powder, nutritional yeast, cayenne, lemon pepper and soy sauce. Served over couscous. With a side of kale salad.

Belated Thanksgiving post
Wonderful Thanksgiving spent with my mom, Paul and Mary. Green bean casserole, combination of mashed cauliflower and potatoes, and roasted sweet potatoes, shallots and kale with Tofurkey sausage. Pecan pie and pumpkin pie too. Went by too quickly!

Eggplant Rollatini
Taking a break from "easy" summer meals, made this eggplant rollatini last night. Quite delicious. This recipe is from a Veg News posting from the new Forks Over Knives cookbook (fighting the urge to order, likely will lose this battle). Lots of leftover millet stuffing, need to find creative use - maybe a stew?

Vegan Chicken Noodle Soup
Paul asked for chicken noodle soup. I hadn't made this before, much less a vegan version, but took the challenge. Found this recipe and it was perfect. I only had 5 cups of broth, it really needed the full 6. Delicious!

Thai Green Curry
Used the recipe from The 30-Minute Vegan by Mark Reinfeld and Jennifer Murray as the basis - tofu, red peppers, shiitake mushrooms, onion, baby bok choy, carrots, corn, basil, bean sprouts with lite coconut milk and a little bit of sriracha with green curry paste. Served over rice.

Green Beans, Mushrooms & Tempeh with Rice
While driving back to the Outer Banks yesterday afternoon, listening to NPR's The Splendid Table, a caller asked advice for cooking for a vegan for a potluck. The hostess described a Moroccan dish with green beans, which inspired me to create my own version. I sauteed onion and green beans until soft, added garlic, then some cherry tomatoes and mushrooms. Added some thyme and sage. At this point, I realized tempeh "bacon" would go perfectly with these flavors, so that was added as well. Added soy sauce. And a little lemon. Served over rice. Will definitely do this again :)

Chloe's Kitchen by Chloe Coscarelli - beautiful cookbook with gorgeous photos. Made the Tempeh Piccata last night, served over garlicky spinach.
Encapsulated Mushroom "Wing"
Another amazing creation from Paul's creative brain. This one - steamed portabella mushroom with garlic and sunflower seeds - topped with pepperjack "cheese" smothered with spicy Wing sauce - great quick snack.

Pasha Mezze
Had an incredible birthday dinner at The Pasha Mezze in Ghent in Norfolk, Virginia. I had the Anatolian Plate (quinoa cake, grilled eggplant steak, grilled tomato over black bean jalapeno salsa and sauteed julienne vegetables). Incredible. And the best part, no dishes to clean this morning :)

Recent Vegan Pizza
On nights when I am at a loss as to what to cook, a pizza is always an easy solution. Quick stop by local pizza parlor for a ball of dough, pop into the market for some Gimme Lean "sausage", mushrooms, onion - with rest of staples at home, dinner is a matter of putting the ingredients for Joanne Stepaniak's "White Melty Cheez" from The Ultimate Un-Cheese Cookbook, into the blender, saute the "sausage", mushrooms, onion and a little tomato sauce (or tomatoes). I pulse this mixture a few times and then spread onto the dough, pour the "cheese" sauce on top, sprinkle some smoked paprika on top and cook at 425 until done.
No-fu Love Loaf
From Let Them Eat Vegan (recipe here). Served with mashed potatoes and www.fatfreevegan.com's Impromptu Mushroom Gravy. The gravy made the recipe, honestly. The loaf was good, but would not have been nearly as good without the gravy.

Paul's Creation
Paul demonstrated his complete competency of vegan food prep when he created this snack over the weekend. He started with a multi-grain tortilla, added hummus with pine nuts, tofurkey deli slices with sauteed shitake mushrooms. This odd combination was incredible! This photo does it no justice.

Golden Potato and Tempeh Casserole
Phenomenal! Did not use the vegan parm, instead, I used panko breadcrumbs and french fried onions (leftover from a green bean casserole) on top - here is the recipe - this will definitely become a "regular"!

Coconut Curry Rice & Kale Salad
Lots of cooking lately, no blogging.
I've focused on Robin Robertson's Vegan On The Cheap. I've owned this cookbook for a while, but it got lost in the stack.
Last night, made her Coconut Curry Rice (page 134). I subbed roasted asparagus for the peas and added some baked tofu. Served it alongside Kale Salad.

Sausage & Mushroom Etouffee
From this recipe: http://blog.fatfreevegan.com/2012/02/vegan-sausage-and-mushroom-etoufee.html. Left out the green peppers. Used 1/4 teaspoon of cayenne, was fairly spicy, probably reduce this down to 1/8 next time (and yes, there will be a next time). Served over jasmine rice.
